Sweet and Savory Garlic Chicken Drumsticks

1 cup
Onion, chopped
8 large cloves
Garlic, peeled
1 cup
Distilled white vinegar
1/2 cup
Soy sauce
2 heaping tablespoons
Brown sugar

Bay leaves, crumbled

  1. In a blender or food processor, puree the onion, garlic, vinegar, soy sauce, brown sugar and bay leaves.
  2. Place the chicken drumsticks in a container or resealable bag, add marinade and refrigerate for at least 3 hours, or overnight.
  3. Preheat oven to 425°F and place chicken in a baking dish, covering meat with remaining marinade.*
  4. Bake for approximately 40 minutes or until chicken reaches an internal temperature of 165°F.
  5. Serve with lime wedges.
