Spicy Chicken Hominy Soup

White onion, chopped

Red onion, chopped
3 cloves
Garlic, minced

Jalapeño, sliced
10 oz can
Hominy
12 oz can
Black beans
1 cup
Tomatoes, diced
16 oz
Tomato paste
32 oz
Chicken broth
1 tablespoon
Chili powder
1 1/2 tablespoons
Cumin, ground
1 teaspoon
Oregano, dried
1 pinch
Cayenne pepper
Salt and pepper, to taste
Cilantro, sour cream, and avocado for garnish
- Heat oil over medium to high heat.
- Add chicken, onion, garlic, jalapeño and cook for 7 minutes until chicken reaches internal temperature of 165°F.
- Stir in hominy, beans, tomatoes, tomato paste, chicken broth, and seasoning.
- Mix well and bring to a boil.
- Once boiling, turn the heat off and let it simmer while covered for about 2 minutes until the flavors combine.
- Garnish with avocado and cilantro.
- Serve and enjoy!
