Smoked Chicken Parmesan

3 teaspoons
minced garlic, divided
1 1/2 teaspoons
Italian seasoning, divided
1/2 cup
olive oil

panko bread crumbs
1/2 teaspoon
garlic salt
1/4 teaspoon
black pepper
1/2 cup
parmesan cheese, divided
2 cups
marinara sauce
8 slices
mozzarella cheese, plus shredded mozzarella cheese
12 oz
angel hair pasta
- Slice SMF Chicken Breast in Half horizontally or use SMF Chicken cutlets. (Make sure the chicken is thin.)
- Beat together 2 eggs and place in a zip lock bag with the chicken breast, 1 teaspoon minced garlic, and ½ teaspoon Italian seasoning.
- Place in the refrigerator to marinate for at least 1 hour.
- In a Cast Iron Skillet heat your olive oil on medium heat with 2 teaspoons of minced garlic.
- Mix panko crumbs with ½ teaspoon garlic salt, ¼ cup parmesan cheese, ¼ teaspoon pepper in a bowl.
- Remove the chicken from the refrigerator and coat evenly with the panko crumb mixture.
- Preheat Smoker to 350 degrees.
- Brown the chicken in the oil around 3-5 minutes per side until golden brown.
- Place Marinara sauce in bottom of oven/grill safe casserole dish.
- Place the browned chicken on top of the marinara sauce, and top each piece of chicken with 2 slices of mozzarella cheese, ¼ cup parmesan cheese and sprinkle Italian Seasonings on top.
- Place on the smoker for around 30 minutes and then top with more shredded mozzarella cheese and bake 5 to 10 more minutes.
- Pairs well with angel hair pasta, garlic bread, and salad.
