Seared Chicken With Veggies

Red bell pepper, cut into 1/2 inch pieces

Garlic, chopped
1/2 cup
Dry white wine
8 cups
Spinach, thick stems removed
- Season the chicken with salt and pepper
- Heat a large skillet over medium-high heat
- Pour in half of the olive oil and cook chicken breasts until golden brown, roughly 5-7 minutes on each side
- Once chicken breasts have internal temperature of 165F, remove onto a clean plate
- While the skillet is still on the stove top on medium-high heat, pour the rest of the olive oil
- Add bell pepper and mushroom, sautéing for 2 minutes
- Now add the garlic and mix
- Pour in wine and allow liquid to reduce down to a fourth
- Mix fresh spinach into the pan
- Season with salt and pepper to taste
- Serve with chicken and enjoy!
