The lemon butter sauce takes these tantalizing tidbits of skewered chicken to the next level and using the air fryer makes it an easy cook.

Chicken Skewers

1 tablespoon
garlic olive oil (or any olive oil)
1/2 tablespoon
lemon olive oil (or any olive oil)
zest of 1 lemon
1 teaspoon
minced garlic
1/2 teaspoon
salt
1 1/2 teaspoons
Cajun seasoning
1/4 teaspoon
onion powder
1/2 teaspoon
garlic powder
1 teaspoon
paprika
1/2 teaspoon
black pepper
  1. If using wooden skewers, be sure to soak them for at least 30 minutes before using.
  2. Cut the chicken into cubes and place them in a bowl and coat with the oils, lemon zest and minced garlic and toss to coat.
  3. In a small bowl, combine all of the dry ingredients and sprinkle over the chicken chunks and stir to ensure an even coat of all pieces.
  4. Slide the chicken chunks on to the soaked skewers and then place them in the air fryer to cook. (Cook in batches if needed and don't over stuff the air fryer.)
  5. Cook at 400°F for about 18-20 minutes, flipping halfway through the cook time. (Internal temperature should be 165°F)

1/4 teaspoon
black pepper
1/2 teaspoon
paprika
3/4 teaspoon
Cajun seasoning
1/2 teaspoon
garlic powder
1/2 tablespoon
brown sugar
1 tablespoon
lemon juice
  1. While the chicken is cooking, make the lemon butter sauce.
  2. In a small bowl, slightly melt the butter (can be clumpy).
  3. Mix in the lemon juice, brown sugar, and dry seasonings.
  4. Brush the chicken on skewers with the butter sauce.
