Honey Mustard Pretzel Chicken Tenders

1/4 cup
Dijon mustard
1/4 cup
mayonnaise
2 tablespoons
honey
1-2 lbs
2 cups
finely crushed salted pretzel twists (or flavored pretzels)
1 teaspoon
garlic powder
1 teaspoon
onion powder
1/2 teaspoon
smoked paprika
1 teaspoon
black pepper
Spray olive oil
Spicy honey dipping sauce (recipe below)
Ranch dressing for dipping (on the side)
  1. In a bowl, whisk together the mustard, mayo, and honey.
  2. Add the chicken and toss well to coat.
  3. Preheat the oven to 425 degrees F, and line a baking sheet with parchment.
  4. Add the pretzel crumbs, garlic powder, onion powder, paprika and a pinch of pepper to a medium-sized bowl: stir to combine. (** If using flavored pretzels, you can skip the added seasoning to avoid over seasoning)
  5. Remove each piece of chicken from the honey mustard, and dredge through the crumbs, pressing gently to adhere: place on the prepared baking sheet.
  6. Repeat until all the chicken has been coated.
  7. Lightly spray the chicken with olive oil.
  8. Transfer to the oven and bake for 15-20 minutes or until the chicken is cooked through to an internal temperature of 165°F.
  9. Make the spicy honey dipping sauce by melting together the honey, butter, cayenne, chili powder, paprika, and a pinch of salt.
  10. Serve the chicken with spicy honey sauce for dipping, and a side of ranch if desired.
