A fresh herb and garlic flavored chicken cheeseburger topped with a truffle lemon aioli that is packed with umami flavor!

Truffle Aioli

1/2 cup
prepared mayonnaise
juice from 1/2 lemon
2 tablespoons
chives, chopped
2 tablespoons
truffle oil*
a dash
black pepper
  1. Whisk together all ingredients in a bowl until evenly combined.
  2. Refrigerate until ready to use.

*If you do not have truffle oil available, any herb infused oil can be used, or garlic oil, nut oils, sesame oil or even just olive oil with dried mushroom powder or minced mushroom to help build the umami flavor.

Chicken Cheeseburgers

1 lb
1/4 cup
chopped herb poultry blend*
2 teaspoons
garlic, minced
1/4 cup
onion, chopped
1/4 cup
butter, melted
salt & pepper, to taste
4 slices
colby jack cheese (or your fave sliced cheese)
4
brioche buns
tomato slices
arugula
  1. Preheat your grill to medium high heat and lightly oil the grate.
  2. Mix ground chicken, herbs, garlic, onion, butter, salt & pepper until evenly combined.
  3. Form the mixture into 4 burger patties.
  4. Cook on preheated grill until internal temperature of each burger reaches at least 165°F with an instant read thermometer (about 6-7 minutes per side).
  5. Add cheese and allow to melt slightly.
  6. While cheese is melting, toast your brioche buns, if desired.
  7. Assemble burgers with sliced tomato, arugula and the truffle aioli.
