- Combine carrots, celery, onions, potatoes, mushrooms, parsley, chicken broth, and seasoning into a pot and bring to a boil.
- Reduce to a low to medium heat after it boils.
- Simmer for 10 minutes until onions and celery are softened.
- Add chicken and remove bay leaf.
- Cook the chicken for about 8 minutes or until the internal temperature reaches 165°F.
- Add lime juice and kale.
- Cook until kale wilts.
