Springer Mountain Farms Fresh Oven Roasted Fully Cooked Chicken Breast Strips, diced
1 can
Diced tomatoes with juice
3 tablespoons
Tomato paste
2 cups
Fat free chicken broth or stock
1 cup
Long grain white rice, uncooked
Fresh parsley, chopped for garnish
- Coat a large pan with cooking spray.
- Over medium-high heat, sauté sausage until edges crisp and meat starts to brown.
- Add onion, green pepper and celery to the pan and sauté until tender.
- Stir in garlic and cook another minute.
- Reduce heat and stir in cayenne pepper, thyme, salt and pepper.
- Stir in chopped chicken, diced tomatoes, chicken broth and uncooked rice and bring to a simmer; cover and cook until rice is tender, about 25 minutes.
- Garnish with fresh chopped parsley for service.
