Chipotle Peach Smoked Chicken Salad

Savor all the flavors of summer in each bite of this smokey chicken salad by using fresh, ripe peaches in a chipotle peach vinaigrette for the salad dressing and also as fresh peach chunks mixed in with the smoked chicken and pecans.

Chipotle Peach Vinaigrette

1 medium
peach, pit removed (does not have to be peeled)**

chipotle peppers in adobo
1 tablespoon
apple cider vinegar
1 tablespoon
honey
1/2 tablespoon
olive oil
  1. To make the vinaigrette, add peach, chipotle peppers, vinegar, and oil to a blender.
  2. Blend until smooth.
  3. Pour into a large bowl.

Chicken Salad

3 cups
1/4 cup
mayonnaise
1 medium
peach, pitted and diced (peeling is optional)
1/4 cup
chopped pecans, toasted
3 tablespoons
green onions, sliced
salt & pepper, to taste
4-6
croissants
sweet paprika, for garnish
leafy lettuce, optional
  1. Add the cooked and diced chicken to the bowl with the vinaigrette along with the mayonnaise, diced peach, chopped pecans and green onions.
  2. Adjust with salt and pepper as needed.
  3. Add more mayonnaise if a creamier consistency is desired.
  4. Assemble as sandwiches or eat with leafy greens.

*Recipe can be made using any cooked chicken and can be made with breasts as well.

**Easily made out of peach season by using frozen peaches.
