Chicken, Spinach and Artichoke Bake

Pasta
1 cup
Frozen chopped spinach, thawed & drained
1 can
Artichokes, drained and chopped
1 cup
Onion, chopped
4 oz
Feta cheese, crumbled
1/2 cup
Greek yogurt
8 oz.
Cream cheese, softened
3 cloves
Garlic, minced
1 tablespoon
Italian seasoning
1 teaspoon
Salt
1/2 teaspoon
Pepper
1 cup
Shredded Parmesan cheese, plus more for topping

  1. Cook pasta 3 minutes less than package directions; Reserve 1/2 cup pasta water and drain the rest.
  2. In a large bowl, add spinach, artichokes, onions, feta cheese, Greek yogurt, cream cheese, garlic, Italian seasoning, salt, pepper, and parmesan cheese, and stir.
  3. Taste to see if you need more salt.
  4. Dice chicken and mix into the cheese mixture.
  5. Add in pasta and 1/2 cup reserved pasta water, and mix to combine.
  6. Pour into casserole dish, top with more cheese and bake at 375°F for 35 min.
