1 cup
Frozen chopped spinach, thawed & drained
1 can
Artichokes, drained and chopped
1 cup
Onion, chopped
4 oz
Feta cheese, crumbled
1/2 cup
Greek yogurt
8 oz.
Cream cheese, softened
3 cloves
Garlic, minced
1 tablespoon
Italian seasoning
1 teaspoon
Salt
1/2 teaspoon
Pepper
1 cup
Shredded Parmesan cheese, plus more for topping

- Cook pasta 3 minutes less than package directions; Reserve 1/2 cup pasta water and drain the rest.
- In a large bowl, add spinach, artichokes, onions, feta cheese, Greek yogurt, cream cheese, garlic, Italian seasoning, salt, pepper, and parmesan cheese, and stir.
- Taste to see if you need more salt.
- Dice chicken and mix into the cheese mixture.
- Add in pasta and 1/2 cup reserved pasta water, and mix to combine.
- Pour into casserole dish, top with more cheese and bake at 375°F for 35 min.
