Chicken & Broccoli Mac and Cheese

Salt and pepper, to taste 
1 1/2 teaspoons
Oil
2 tablespoons
Unsalted butter
2 tablespoons
All-purpose flour
1 cup
White onions, diced
2 cups
Whipping cream
1 cup
Gouda cheese, grated
1 1/2 cups
Sharp cheddar cheese, grated
1 cup
Provolone cheese, shredded
2 cups
Pasta shells, freshly cooked
1 small head
Broccoli, cut into florets and steamed
Chopped chives for garnish
  1. Place Lodge Cast Iron Dutch oven over medium heat.
  2. Season chicken with salt and pepper.
  3. Add oil and cook chicken until internal temperature of largest piece of chicken reaches 165°F.
  4. Remove chicken onto clean plate.
  5. Melt butter.
  6. Stir in flour until butter and flour are well integrated.
  7. Reduce temperature to low medium heat, add onions and cook 1 - 2 minutes until translucent.
  8. Slowly stir in cream and mix well until well incorporated.
  9. Bring cream mixture to a simmer and slowly add cheese.
  10. Season with salt and pepper.
  11. Add chicken, broccoli, cooked pasta shells. Mix well.
  12. Garnish with chopped chives, serve and enjoy!
