Cooking spray

small flour tortillas (about 4")

1/2 cup
buffalo sauce
1 cup
shredded lettuce
1/2 cup
crumbled feta cheese*
  1. Preheat oven to 425°F.
  2. Spray one side of the tortilla lightly and nestle greased side in a muffin tin.
  3. Repeat with remaining tortillas until all of the muffin tin cups are full, lightly spray the insides of each tortilla cup with spray, and bake for 6-8 minutes or until crunchy.
  4. Heat the chicken according to packages instructions. (Ansley cooks hers in an air fryer at 375°F for 12 minutes.)
  5. Once heated and crispy, remove from air fryer, and chop into bite sized pieces.
  6. Toss the chopped chicken pieces with your favorite buffalo sauce.
  7. Add shredded lettuce to the bottoms of each tortilla cup.
  8. Place a spoonful of buffalo chicken chunks on the lettuce and top with the cheese.

NOTES

*or use your favorite crumbled blue cheese or other finely shredded cheese
