Corn Black Bean Salsa

2 cups
corn kernels, fresh, canned or thawed
1 cup
black beans, drained & rinsed
1/4 cup
cilantro, finely chopped
1/4 cup
red onion, finely chopped
2 tablespoons
fresh jalapeno, finely diced (optional)
1/4 cup
red bell pepper, finely diced
2 teaspoons
lime juice
2 teaspoons
lemon juice
1/2 teaspoon
salt
  1. Mix all ingredients together.
  2. Chill for 30 minutes or overnight.

Blackened BBQ Chicken Skewers

1 lb
Springer Mountain Farms Boneless, Skinless chicken Thighs, cut into bite sized pieces*
1/4 cup
blackening seasoning
2 tablespoons
olive oil
1 tablespoon
apple cider vinegar or lime juice
1 tablespoon
soy sauce
1 tablespoon
brown sugar
1/2 cup
prepared BBQ sauce
Corn Black Bean Salsa
  1. Whisk together vinegar, soy sauce, brown sugar and BBQ sauce and set aside.
  2. Marinate the chicken with olive oil and blackened seasoning for 20 minutes to overnight.
  3. When ready to cook the chicken, preheat your grill to medium-high heat.
  4. Place blackened chicken pieces on skewers; be sure to soak wooden skewers for at least 30 minutes to prevent burning.
  5. Cook until slightly charred for about 3-6 minutes per side.
  6. Baste with BBQ sauce and remove from grill.
  7. Serve over a bed of the Corn Black Bean Salsa.

*Boneless, skinless breasts can easily be substituted for the boneless, skinless thighs.
