Beer Can Chicken
- Preheat grill or smoker to 275°F.
- Remove giblet packet for another use.
- Season the whole chicken inside and outside thoroughly.
- Position the chicken sitting upright over the beer* can (vertically) in a cast iron pan so that the tips of the drumsticks touch the bottom of the pan.
- Fold the wing tips and tuck them behind the back so that everything cooks evenly.
- Place the pan of chicken in the smoker and cook until the chicken breast and thickest part of the thigh reaches 165°F. (Should take a few hours!)
- Remove chicken from smoker and let rest for 10-15 minutes or until cool enough to pull the meat from the bones.
*You can substitute the can of beer for wine, water or chicken broth. (Just about any liquid will work!)
Simple Butter Veggie Pasta
1 box
pasta (any shape)
1 bag
mixed frozen vegetables
1/2 stick
salted butter
1 tablespoon
seasoning of your choice
parmesan cheese for topping, shredded
- Cook pasta according to package directions.
- Drain most of the water out of the pasta.
- Add butter, veggies and seasoning and mix thoroughly.
- To serve, place the pasta veggie mix in a bowl or plate, top with the shredded smoked chicken and top with shredded parmesan cheese.
