Beer Can Chicken

chicken seasoning of your choice
  1. Preheat grill or smoker to 275°F.
  2. Remove giblet packet for another use.
  3. Season the whole chicken inside and outside thoroughly.
  4. Position the chicken sitting upright over the beer* can (vertically) in a cast iron pan so that the tips of the drumsticks touch the bottom of the pan.
  5. Fold the wing tips and tuck them behind the back so that everything cooks evenly.
  6. Place the pan of chicken in the smoker and cook until the chicken breast and thickest part of the thigh reaches 165°F. (Should take a few hours!)
  7. Remove chicken from smoker and let rest for 10-15 minutes or until cool enough to pull the meat from the bones.

*You can substitute the can of beer for wine, water or chicken broth. (Just about any liquid will work!)

Simple Butter Veggie Pasta

1 box
pasta (any shape)
1 bag
mixed frozen vegetables
1/2 stick
salted butter
1 tablespoon
seasoning of your choice
parmesan cheese for topping, shredded
  1. Cook pasta according to package directions.
  2. Drain most of the water out of the pasta.
  3. Add butter, veggies and seasoning and mix thoroughly.
  4. To serve, place the pasta veggie mix in a bowl or plate, top with the shredded smoked chicken and top with shredded parmesan cheese.
