Bang Bang Grilled Chicken Tacos

A nice twist on the traditionally fried bang bang chicken by marinating chicken pieces before skewering and throwing on the grill. Aromatic spices flavor the chicken nicely and create a flavor explosion in your mouth when drizzled with bang bang sauce.

Chicken Marinade

1.5 lbs
2 tablespoons
olive oil
2 teaspoons
garlic powder
1 teaspoon
salt
1/2 teaspoon
black pepper
1/2 teaspoon
chili powder
1/2 teaspoon
garlic powder
1/2 teaspoon
onion powder
  1. Cut chicken thigh meat into 1 inch pieces and place in a large bowl and toss in olive oil.
  2. Add dried ingredients and mix around until all of the pieces of chicken are mostly coated with the seasoning rub.
  3. Marinate for at least 2 hours or overnight.
  4. If using wooden skewers, make sure they have been soaked in water for at least 30 minutes to help prevent them from burning.
  5. When ready to grill, preheat the grill or griddle to high.
  6. Skewer chunks of thighs onto the wooden skewers, packing closely together, but not too tightly to help the chicken cook through properly.
  7. Place skewers on the grill with the turning edges closest to the outside of the grill.
  8. Cook for about 6-8 minutes per side or until the chicken reaches an internal temperature of 165 degrees.
  9. Remove from grill, drizzle with bang bang sauce and serve with warm street sized tortillas.

Bang Bang Sauce

1 cup
mayonnaise
1 1/2 tablespoons
sriracha sauce
1 tablespoon
Worcestershire sauce
2 tablespoons
honey
1 teaspoon
rice wine vinegar
  1. Mix all ingredients together in a small bowl and whisk until completely combined.
  2. Refrigerate until ready to use.
  3. Best made ahead so flavors can meld.
