Apricot Chipotle Glazed Chicken Wings

3 lbs
Springer Mountain Farms Chicken Wings*
BBQ rub**
11 oz
Apricot preserves
1 tablespoon
Diced chipotle peppers in adobo sauce (+1 teaspoon of adobo sauce)
1/2 teaspoon
Smoked paprika
1/2 teaspoon
Salt
1/4 cup
Apricot nectar (substitute apple or grape juice if nectar isn't available)
Chopped parsley, for garnish
  1. Preheat grill to medium high heat (about 400°F), setting up for dual cooking zones (direct & indirect).
  2. While grill is heating, shake BBQ rub onto wings, making sure to lightly and evenly coat each piece on all sides; let sit at room temp until ready to cook.
  3. In a small saucepan, heat apricot preserves until mostly melted. (Depending on preserves used, there may be chunks of fruit.)
  4. Add chipotle peppers, adobo sauce, smoked paprika, salt and nectar to melted preserves, mixing to combine; set aside to cool.
  5. Place chicken on grill for about 4-6 minutes per side over direct heat. (If your rub has a high sugar content, watch for burning and move to indirect heat zone if necessary.)
  6. Check the internal temperature, looking for 165°F. If additional cooking time is needed, move to indirect side of heat to finish cooking.
  7. Toss wings in apricot chipotle glaze and place back in indirect heat zone to set the glaze (just a few minutes).
  8. Garnish with chopped parsley if desired.
