Instant Pot Coq au Vin

3 slices
Thick-cut bacon, chopped

Yellow onion, chopped
3 cloves
Garlic, minced
2 tablespoons
Tomato paste

Carrots, diced
1 1/2 lbs
Springer Mountain Farms Boneless Skinless Chicken Thighs
8 oz
Baby bella mushrooms, sliced
1 1/2 cups
Red wine*
1 cup
Chicken broth
2
Bay leaves
1 teaspoon
Thyme
Salt & pepper, to taste
1 tablespoon
fresh parsley, chopped (for garnish)
  1. Select "sauté" and add bacon.
  2. Sauté for 5 minutes and remove the bacon.
  3. Add onion, tomato paste and garlic and sauté for 5 minutes.
  4. Add broth, red wine, thyme, chicken, bay leaves, carrots, salt, pepper and mushrooms, close the lid and cook on high pressure for 15 minutes.
  5. When cooking time is complete, do a quick pressure release.
  6. Open the lid and select "sauté".
  7. Add parsley and cooked bacon, and stir well.
  8. Recommend serving with mashed potatoes.
