Mushroom Swiss Chicken Burger with Arugula and Caramelized Onions

Sauteed mushrooms

Large sweet onions, halved & sliced

Thyme, ground

Chicken broth
1/2 teaspoon

Baby Portobello mushrooms, cleaned & sliced
1 teaspoon
Olive oil
1 1/2 teaspoons
Butter
2 teaspoons
Worcestershire sauce
2 teaspoons
Chives, cut thin
- Preheat large pan over medium heat.
- Add vegetable oil and carefully swirl the oil to coat the pan.
- Place burger patties into the pan and cover with a lid; cook the first side for 3-4 minutes and then flip.
- Top each burger patty with a single slice of cheese, cover with lid, and cook for an additional 3-4 minutes or until the internal temperature reaches 165°F.
- To assemble burger, spread bottom of bun with 1 tablespoon of the Secret Sauce.
- Add the burger patty with cheese and top with caramelized onions, mushrooms, arugula and top bun.
- Cook onions, olive oil, butter, and thyme in a large pot over medium high heat for about 30 minutes, stirring occasionally.
- Deglaze the pan with chicken broth scraping the bottom of the pan to release the brown bits on the bottom of the pan (the fond).
- Cook for 5-7 minutes or until all of the liquid has evaporated.
- Season with salt and pepper and hold for burger assembly.
- Dry sear the sliced mushrooms by adding them to a large sauté pan over medium-high heat, cooking for 3-5 minutes, stirring occasionally.
- Remove any excess liquid, and add remaining ingredients.
- Sauté over medium-high heat for another 3-5 minutes or until golden brown.
- Hold for burger assembly.
