Springer Mountain Farms fresh chicken burgers make a great base for taking fajitas from a tortilla to a bun! It's a messy one, but worth it!

Chicken Fajita Burger

Springer Mountain Farms Fresh Chicken Burgers (1 package)
1 tablespoon
Lime juice
1 tablespoon + 1 teaspoon
Chopped cilantro, divided
1/2 teaspoon + 1/4 teaspoon
Chipotle chili powder, divided
1/2 teaspoon+ 1/4 teaspoon
Ground cumin, divided
1/4 teaspoon
Oregano
1/4 teaspoon
Garlic powder
2-4 tablespoons
Olive oil, divided
1
Red bell pepper, seeded and sliced into thin strips
1
Onion, peeled and sliced into thin strips
2 cloves
Garlic, minced
Salt & pepper, to taste
4 slices
Colby jack or pepper jack cheese
4
Buns or rolls
Prepared guacamole (optional)
Salsa (optional)
  1. In a small bowl combine lime juice, 1 tablespoon cilantro, 1/2 teaspoon chipotle chili powder, 1/2 teaspoon ground cumin, 1/2 teaspoon oregano & 1/4 teaspoon garlic powder. (Burgers have been pre-seasoned with salt and pepper, so don't add those here!)
  2. Rub mixture on all sides of burgers and let sit while prepping vegetables for burgers.
  3. Mix together in a small bowl: 1 teaspoon chopped cilantro, 1/4 teaspoon chipotle chili powder, 1/4 teaspoon ground cumin, plus add salt & pepper to taste.
  4. Set aside until ready to season the sauteed vegetables.
  5. In a cast iron skillet or sauté pan, heat 1 tablespoon of olive oil (or your preferred cooking oil) over medium high heat.
  6. Add sliced peppers and onions, sauteing until tender (3-5 minutes).
  7. Add in minced garlic & fajita seasoning for vegetables & cook for an additional minute, stirring constantly to prevent spices from burning.
  8. Remove from pan and keep warm.
  9. Add 2 tablespoons of olive oil to warm skillet, and place burgers in pan.
  10. Cook for about 6-9 minutes per side, or until the internal temperature of each burger reaches 165°F. (Reduce heat if needed to prevent burning exterior of burger before inside reaches proper temperature. You may also want to cover with a lid or aluminum foil once both sides are browned to help speed up the cooking process.)
  11. Once the correct temperature is reached, place cheese slices on burgers and allow to melt slightly; remove from pan and assemble burgers.
  12. To assemble, spread prepared guacamole over the bottom portion of the bun, top with the burger and add a spoonful of salsa.
  13. Place sauteed vegetables on top of salsa & finally place top half of bun on burger.
