Chefs Shane Nasby of HoneyFire Barbecue and Hattie B’s John Lasater have both earned great acclaim for their talent cooking chicken. Nasby’s signature honey rub-dusted Springer Mountain Farm chickens are smoked over hickory and have become some of the most popular dishes at his Bellevue restaurant. Open less than a year, HoneyFire has already become the favorite spot for barbecue in the growing neighborhood. Hattie B’s is nationally-known for their versions of Nashville hot chicken with spice levels ranging from Mild to the infernal “Shut the Cluck Up” that will pretty much burn the taste buds off your tongue.
So you can imagine our excitement when the news came out recently in the Nashville Scene that HoneyFire Barbecue and Hattie B’s were planning a collaborative dinner together in HoneyFire’s dining room on Sunday, August 11. There will be two seatings at 5:00 and 7:00 for a family-style four-course dinner which will feature a main course built around chicken that is dusted in HoneyFire’s rub and then smoked before Lasater takes over to apply his spicy Hattie B’s seasoning and crispy frying process. Finally, Nasby will hit the smoked and fried chicken with a hint of honey glaze and serve it with a medley of HoneyFire’s barbecue sauces. Both mild and hot versions will be available at the table.
In addition to this amazing main course, the meal will come with appetizers and side dishes which the chefs have collaborated on plus dessert, soft drinks or iced tea. Alcoholic beverages will also be available for purchase. Here’s the entire menu:
First Course - Honey Hot Block Bites and Hot Chicken Bites
Second Course - Georgia Whites Hot Shrimp with Smoked Lemon Vinaigrette and a Simple Salad
Third Course - Smoked Hot Chicken served with Pimento Mac n Cheese, Beer Braised Greens, and Grilled Potato Salad with Candied Bacon
Fourth Course - Buttermilk Pudding Cakes with Bourbon Peaches and PB Banana Pudding Shooters
