We like to think sweater weather means a big pot of chili and all of the incredible aromas filling the house. Is there anything better than a big pot of chili simmering on the stove all day? Nope, not in our kitchens anyway!

Don't worry if you can't find ground chicken in your area. All of these recipes could also be done with either boneless skinless breasts or boneless skinless thighs by cutting them into small pieces and cook in the same method as the ground chicken.

There's a huge debate about chili and if it includes beans or just meat. Chili purists think beans have no place in chili, but that's really a personal preference. Beans make it stretch a little further, add texture, provide another source of protein, and also carry the flavor of the spices used in the dish.

Chili + Cornbread

Chicken Chili from Nicole at Golden Grace Kitchen uses a Gluten Free Cornbread Bowl for serving her favorite chili. Her version is a protein packed bowl of chili with lean ground chicken and 2 kinds of beans. Nicole loves using Springer Mountain Farms 99% Fat Free Ground Chicken because of the leanness and because it's made from all white meat. She likes to serve hers over a gluten-free cornbread but that's completely optional if you want a lower calorie meal.

Or try making this Chicken Chili Over Cheddar Cornbread Waffles! It's definitely a new take on chicken and waffles. The little indentions in the cornbread soak up the flavorful chili base. This one uses black beans and either kidney beans or pinto beans along with ground chicken.

White Chicken Chili Options

Another great way to utilize chicken in chili is in a green or white chili like our White Bean Chicken Chili. This recipe uses the boneless skinless breasts and mixes in white beans and corn along with Greek yogurt for a creamy addition that also adds tang. With just 45 minutes from start to finish, it's quick chili but packed with flavor.
