Seasoning, Lemon Pepper or Italian Herb
It is best if you start with fully thawed chicken breast. Grind or apply seasoning of your choice in a separate container and place the container with the chicken breast back in the refrigerator for at least 30 minutes to allow the poultry to absorb the seasoning and flavor from your spice selection. After this, grill the chicken breast. I use our George Foreman grill since we live in an apartment and it works very well, and is amazingly quick also! Cooking time on the George Foreman grill is usually less than 10 minutes. Note: Slightly cut open each chicken breast to ensure that the meat is cooked throughly (165 degrees F), as the chicken breasts are thick and require a little longer than the thinner sliced products.
One breast should easily satisfy one adult. For smaller children or those with less of an appetite (such as my wife) half of a chicken breast will be plenty.
Although this is an extremely easy recipe, it is one that is sure to please and requires very little preparation time. I usually accompany this main entree with fresh or canned greened beans, mashed potatoes, corn, or macaroni and cheese.
