1 SMF Whole Chicken 3 Cups Panko Bread Crumbs 1 Cup Mayonnaise 1/4 Cup Prepared Wasabi 3 Tbsp Fresh Parsley, Minced 1 Tbsp Brown Sugar
1 Tsp Honey Salt, to Taste Ground Black Pepper, to Taste 2 Lemons, Quartered 4 Garlic Cloves, Peeled
In a mixing bowl, combine mayonnaise, wasabi, breadcrumbs, parsley, brown sugar honey, salt, and pepper. Fold ingredients together until incorporated. Rub mixture over chicken, assuring all parts of chicken are covered with mixture. Slice lemons into quarters and place into cavity of chicken along with garlic cloves and any remaining wasabi cream mixture. Place thawed, rubbed chicken into roasting pan and cover loosely with aluminum foil. Cook chicken in preheated 375 degree F oven for 45 minutes to one hour (15 to 18 minutes per pound). Cook chicken until meat thermometer indicates internal temperature of chicken to be 165 to 170 F testing temperature on thigh. Remove aluminum foil 30 minutes into cooking to allow browning of crust. Allow cooked chicken to rest prior to serving.
