Apricot-Ginger Saucy Chicken Breasts

Ingredients:
1 Tbsp Butter
2 Garlic Cloves, Crushed
1 lb SMF Boneless, Skinless Breasts
1/3 Cup Apricot Jam
Vinegar
1/2 Tsp Salt
3 Tbsp Soy Sauce
1 Tsp Fresh Ginger, Grated
2 Tbsp Rice Wine
Cooking Instructions:
In a large skillet heat butter over medium-high heat and sauté garlic until just fragrant, about 3 minutes. Add chicken breasts and sear on both sides until brown, about 4-5 minutes on each side. Remove from pan and keep warm. Reduce heat to medium and add remaining ingredients and blend well, bring to a simmer. Place chicken breasts and any juices back in pan and coat with sauce, continue cooking for 5-7 more minutes or until chicken is cooked through (cut to test) and sauce is thickened.
Serving Suggestions:
I pair this with steamed sticky rice for an Asian dinner with bean sprouts and broccoli on the side.
