1 lb SMF Chicken
1-16 oz Can Tomatoes
2-16oz Cans Coconut Cream
3 Garlic Cloves, Crushed
4 Small Fresh Red Chiles, Seeded & Chopped
6 Fresh Kaffir Lime Leaves
6 Green Shallots
2 Tbsp Curry Paste, Mild
1 Tsp Turmeric
2 Tsp Cumin Seeds
1 Tsp Coriander, Ground
1 Tbsp Fresh Lemongrass, Chopped
1 Tsp Sugar
1 Tbsp Peanut Oil
2 Tsp Fish Sauce
Cooking Instructions:
Curry Paste, Tumeric, Coriander, Lemongrass, Sugar and Undrained Tomatoes until smooth.
Heat oil in pan and add garlic, shallots and chiles. Cook stirring for 3 minutes. Add pureed tomato mixture, cook stirring until fragrant. Add remaining ingredients and simmer uncovered until chicken is cooked.
Serving Suggestions:
Serve over Jasmine rice. Sprinkled with fresh chopped cilantro (optional).
