Blend: Curry Paste, Tumeric, Coriander, Lemongrass, Sugar and Undrained Tomatoes until smooth. Heat oil in pan and add garlic, shallots and chiles. Cook stirring for 3 minutes. Add pureed tomato mixture, cook stirring until fragrant. Add remaining ingredients and simmer uncovered until chicken is cooked.
Serve over Jasmine rice. Sprinkled with fresh chopped cilantro (optional).
