Kickin' Low Fat Curry Chicken

4 SMF Boneless, Skinless Breasts
1 Can Low Fat Coconut Milk
4-5 Tbsp Bolst's Mild Curry Powder
Jasmine Rice
1 Red Pepper, Sliced
1 Orange Pepper, Sliced
1/2 Large Onion, Sliced
Smart Balance Oil
Cooking Instructions:
Cook rice according to package directions (rice steamer works best). Sprinkle chicken with curry powder. Put chicken in large frying pan with 1 tablespoon Smart Balance Oil, cover and cook on medium heat until completely cooked, remove from pan and set aside. Pour 1 tablespoon Smart Balance Oil in pan, add peppers and onion. While the peppers and onions are cooking, slice the chicken into strips. Place chicken on top of peppers and onions. Add coconut milk. Add 2-3 tablespoons curry powder (to taste) and 1/2-1 teaspoon salt (to taste). Cook until sauce thickens.
Serving Suggestions:
Place steamed rice on plate and top with chicken, peppers and onions.
Additional Comments:
Great thing about low fat coconut milk is that it is much lower in fat and calories than heavy cream or whole milk. It does not need a Rue (butter & flour) to make the sauce thicken.
