Greek Lemon Chicken

Ingredients:
Whole Springer Mountain Chicken
2 Large Sweet Onions, Thickly Sliced
Cooking Spray
2 Lemons
1-2 Cups Water
Oregano
Flour or Cornstarch
Cooking Instructions:
Clean chicken and place it on a rack in a roasting pan. Surround with onions. Squeeze juice of 1 lemon over all. Slice remaining lemon and place over chicken. Spray everything with cooking spray. Sprinkle with oregano.
Cook at 400 degrees for 1.5 hours uncovered. Add water (for delicious gravy), cover, and cook another hour at 350 degrees.
Serving Suggestions:
Make gravy, eat the onions, throw away the lemons. Serve with smashed potatoes and a green veggie. MMMM MMMM good!

We call this one Fall-E off the Bone-E Chicken at our house! This is my favorite "comfort food" recipe.
